Why do we celebrate jesus's birth on december 25th if we are not certain of his birth date?

since the story goes that the shepherds were in the fields with their cattle wouldnt that mean it was closer to spring or summer when they followed the northern star to where jesus was born? so why do we act like his birthday is in the middle of winter????
